What IS AWASHED PROCESS?

Washed process is a coffee processing method where harvested coffee fruits are immediately processed to remove the fruit meat before the beans are dried. In this process, coffee fruits are soaked in water to break fruit meat and remove mucilage layers, then washed to ensure cleanliness of the beans. After that, clean seeds are sun-drying or using a drying machine. The result is coffee beans with a cleaner, brighter, and acidic flavor profile, often highlighting the characteristics of varieties and have a fresh scent.
