Benishoga is a Japanese pickle made from thin strips of ginger. It’s traditionally produced using a type of vinegar called Umezu that’s a byproduct of pickling ume, a Japanese fruit known for its incredibly sour taste. The bright reddish-pink color of Benishoga is typically achieved using Red Perilla as a natural food coloring.
Beni Shoga is used as a topping on a wide variety of Japanese dishes including takoyaki, okonomiyaki, donburi, onigiri and yakisoba. It’s often served on the side as an optional condiment due to its strong ginger flavor.
